The white colour is specifically for dairy products alongside other colours to eliminate the risk of cross contamination. A blue colour is specifically for raw fish, a red colour is for raw meat, yellow is for raw poultry, green is for fruit and vegetables, the brown colour is for cooked meats and the purple colour is for allergens. A different colour for each kind of ingredient helps chefs to stick to health and safety practices.
Where possible please wash by hand using a non-chlorinated solution. For LDPE it is advised that washing in a dishwasher could cause warping & bowing of the board.
