The Moffat Turbofan E35D6-26/P85M12 pairs a full size electric digital convection oven with an integrated 12-tray proofer and holding cabinet for high-volume bake and rethermalization workflows. A 2-speed bi-directional reversing fan system and programmable digital controls help deliver even results across up to six full size sheet pans. Steam injection and multi-stage programming support consistent baking, roasting, and finishing, while the proofer provides controlled heat and humidity for dough proofing or warm holding. Stainless exterior surfaces and a porcelain-enameled oven chamber are built for demanding commercial kitchens.
