The Master Grade I.O. Shen 3011 is a 6¾-inch wide-blade Oriental slicer engineered for precision work with herbs, vegetables, and boneless proteins. Its curved flat-edge blade produces a natural rocking motion that minimizes wrist strain while delivering clean, consistent cuts for slicing, dicing, and mincing tasks. At its core is proprietary Triplex Steel Technology, where a super-hard ERDON 62° steel layer is sandwiched between two layers of softer ERDON 10° steel, achieving a rare balance of extreme sharpness and impact resistance. Each knife is individually handcrafted to a 15-degree edge angle and hand-finished over approximately 7 hours, with the wider blade doubling as a food transfer tool from board to wok. The full-tang ebonite handle features a distinctive Yin Yang-inspired engraving, offering superior balance, a heat-resistant grip, and a refined aesthetic suited to professional kitchen environments.
