The Dexter Russell Traditional 5387 is a 7-inch high carbon steel cleaver built for serious butchery work, capable of handling beef, pork, lamb, poultry, fish, and dense cartilage with ease. Individually ground and hand honed to a razor-sharp edge, its unique edge geometry delivers long-lasting performance that is easily restored with every sharpening. The polished rosewood handle, secured with large brass compression rivets, provides a comfortable and secure grip during heavy-duty chopping. Part of Dexter Russell’s iconic Traditional line that has been trusted by food professionals since 1818, this cleaver is assembled in the United States. Note that the high-carbon steel blade requires hand washing, drying, and periodic oiling to prevent rust and staining.
