Description
The I.O. Shen Mastergrade K005 is a 6-3/4 Japanese boning and fillet knife built for professional butchers and chefs who require precision and control when separating meat, fish, and poultry from bone and skin. The narrow, flexible blade with a tapered tip allows the knife to navigate effortlessly around joints and contours, making de-boning and filleting fast and accurate. At its core is Triplex Steel Technology, where a layer of 62 HRC super-hard steel is sandwiched between two layers of softer stainless steel, resulting in an edge that is both extremely sharp and remarkably durable. Each knife is hand-sharpened to a 15-degree angle by skilled craftsmen and takes approximately 7 hours of hand finishing. The distinctive ebonite handle, designed with a Yin Yang philosophy for improved balance and grip, is fully tanged, heat resistant, and food safe.
