It ships with 30 included 1/6 size (4 deep) food pans and accommodates 6 deep pans, all kept at safe temperatures beneath foam-insulated, stainless steel lift-up lids. A 1/2 hp rear-mounted refrigeration system using eco-friendly R-290 hydrocarbon refrigerant maintains interior temperatures between 33 and 40 degrees Fahrenheit, while a removable 8 7/8 deep full-length cutting board provides a dedicated prep surface.
