The Master Grade R-657 is a 7 in. (180mm) heavy Chinese-style Taiwanese chef knife built for serious culinary professionals who demand exceptional performance. Its blade is crafted from a proprietary steel blend clad in softer stainless steel using a 3-layer construction technique, delivering outstanding edge retention combined with the ability to be sharpened on traditional whetstones. Master Grade is one of only two manufacturers in the world still producing knives with this traditional 3-layer technology, and each piece is handmade over approximately 7 hours. The knife features a stainless steel handle measuring 4.3 in., making it easy to clean and maintain in demanding kitchen environments.
